Jam - Blueberry Chia Seed Jam

  • 2 cups fresh or frozen blueberries
  • 1/4 cup orange juice
  • 1/3 cup chia seeds
  • 1-2 tablespoons maple syrup (optional)
  1.  Place the blueberries and juice into a saucepan.
  2. Warm over medium and cook for about 10 minutes, or until the berries start to release their juices.
  3. Remove from heat and stir in the chia seeds and maple syrup, if using. Cover and let cool.
  4. Stir and mash the berries with the back of a spoon. The chia seeds will have plumped up to thicken the jam.
  5. Taste and add more sweetener If desired.
